Select an item, choose a quantity with the +/- controls or MAX, then hit Cook. Each fish rolls independently against your current burn chance — a failed roll produces the burnt version of that fish instead (Burnt Herring, Burnt Trout, Burnt Tuna, or Burnt Bass), which is junk: no heal, no XP.
